Every Cut Fresh order is custom-prepared to your exact specifications. We then use a 12-step production process to ensure you get the freshest, safest ingredients possible.

Intake/Procurement

Our produce experts will work with you to identify your needs — what produce you need, in what quantities, with what preparation, and in what packaging. Then, we carefully source the best produce from our parent company, V. Marchese. Since our facilities are so close together, the produce doesn't have far to travel before processing, so you are assured of getting the freshest product as quickly as possible.

Staging

Once the produce is ready for processing, we carefully set up our precision cutting and packaging equipment, making sure the production line is spotlessly clean and ready for produce.

Cleaning and Cutting

Once the equipment is set up, it’s meticulously cleaned yet again, and the produce is carefully inspected and cleaned before processing. Then, the produce is peeled and cut according to your specifications.

Washing

Once cut, the produce is washed to help maintain its freshness.

Drying

After the produce is washed, it is spun in a dryer to remove excess water. This helps to maintain quality and freshness. It also extends the shelf life of the product.

Quality Inspection

Our freshness-obsessed experts meticulously inspect the cut produce to ensure its freshness, color, uniformity, and consistency. Any blemished or improperly cut product is removed and replaced.

Packaging/Weighing

Produce is gently packaged according to your needs and specifications and carefully weighed to ensure consistency and quality.

Sealing

Individual packages are sealed and labeled according to your instructions.

Metal Detection

Yet another precise quality control inspection is performed to make extra sure that the only thing in every package is your fresh, delicious produce.

Final Packing

Individual packages are packed in cases, ready to be shipped.

Pallet Staging

Right before we say goodbye to your order, cases are arranged on pallets to ensure they are not damaged in shipping. The product is then quickly cooled to 36ºF to ensure safety and longer shelf life.

Shipping

Pallets are loaded onto our company trucks and shipped out to you.
