Jack Marchese

Managing Partner

Jack Marchese’s background as a successful lifelong member of the industry gives him tremendous insight on how to provide Cut Fresh with the best possible precuts.

Jack Marchese, managing partner at Cut Fresh, learned the family business at V. Marchese, working alongside his father on a delivery truck. As soon as he was able, Jack began full time at V. Marchese and learned the family business from the ground up, serving in multiple capacities, always with an eye on quality and building strong relationships with customers. After his parents retired, Jack became the CEO of V. Marchese.

As time progressed, he saw the need for a “precut” company, so along with Jack Wertz, and Salvatore Marchese, he decided to create Cut Fresh to bring a whole new level of convenience to the produce industry.

Jack is a dedicated family man (one must be to run a family business!) and is an avid outdoorsman in his free time.

Jack Wertz

Managing Partner

Jack Wertz is a lifelong industry professional dedicated to bringing every one of our customers the highest-quality, freshest, and cleanest products across the board.

Jack Wertz is a full-time, self-made salesman with a passion and drive for growth.  Jack got his start as a teenager in the food industry, working full time as a driver since 1985. He drove routes in the morning, coming back in the afternoons to create his own price sheets and calling businesses to grow the business.

Over time, he transformed himself into a salesperson. It took awhile for him to be taken seriously, being only 19 years old. He won his first big account, a hospital, and things began to change. Customers continued to buy from Jack for about a decade, forming deep, personal relationships with the buyers.

Jack is a lifelong industry professional dedicated to bringing every one of our customers the highest-quality, freshest, and cleanest products across the board, expertly prepared to their exacting requirements.

Sal Marchese

COO

Sal Marchese is at the heart of our obsession for quality. He has learned new skills to develop new cuts and collaborated with customers on new blends to meet business needs.

Sal Marchese began his journey in the family business working on the lettuce line, cutting lettuce, in June 2013. Since then, he has worked every single position in Cut Fresh from bottom to top — from machine maintenance to quality control. Sal is at the heart of our obsession for quality. He has learned new skills to develop new cuts and collaborated with customers on new blends to meet business needs.

At Cut Fresh, he is a huge advocate for employee safety, keeping employees safe and ensuring our people are just as well taken care of as our customers.

For Sal, being chief operating officer is about being there to help with anything that any of our people need him to do, no matter the day, time, or place.

Joshua Weber

CFO

Joshua Weber is a seasoned chief financial executive with over a decade of leadership experience in finance and management.

Joshua Weber is a seasoned chief financial executive with over a decade of leadership experience in finance and management. Currently serving as the CFO of V. Marchese and Cut Fresh, he oversees financial strategy, operational management, and organizational growth. Joshua’s tenure at the company spans more than 10 years, including six years in his current role, where he has been instrumental in driving efficiency and profitability.

Prior to his current role, Joshua honed his leadership skills across various industries, holding positions such as accountant, front desk manager, and patient care coordinator. His early career includes roles in banking and automotive management, where he developed a keen eye for operations and customer service excellence.

With experience in banking and expertise in management, public speaking, and coaching, Joshua has brought a well-rounded skill set to his role as CFO of V. Marchese and Cut Fresh. He is proficient in financial analysis, strategic planning, and operational leadership.

Joshua earned a bachelor’s degree from Concordia University Wisconsin, majoring in history, legal studies, and political science. He also earned his Master of Business Administration (MBA) with a dual focus on accounting and human resources at Concordia in 2020.

Joshua proudly serves as a board member of Milwaukee’s Harbor District BID 51, supporting the local community.

Heiko Rotzsche

IT Director

Heiko Rotzsche is responsible for the company’s security and technology strategy, operations, and infrastructure.

Heiko Rotzsche is responsible for the company’s security and technology strategy, operations, and infrastructure. He aligns IT initiatives with business objectives while ensuring robust data security. Heiko joined V. Marchese and Cut Fresh in 2023.

Prior to joining V. Marchese, Heiko served as IT director at the SBS Dresden group of companies in Germany, where he spent 25 years as IT project manager and consultant for clients across Europe. He is passionate about leveraging technology to solve challenges in a dynamic digital landscape.

Mike Buelow

Food Safety Quality Assurance (FSQA) Sanitation Manager

Mike Buelow serves Cut Fresh as our Food Safety Quality Assurance Sanitation Manager, making sure that every Cut Fresh batch is held to the highest standards.

The second oldest of four children, Mike Buelow enjoyed cooking and baking with his mom in the kitchen growing up. Upon graduating from St. Thomas More High School, Mike entered the United States Navy at the age of 17. Mike became a Mess Management Specialist where he learned the “Navy Way” of baking, cooking, food safety, and sanitation. After graduating from Mess Specialist training, Mike proudly served on the nuclear submarine USS Theodore Roosevelt and then on aircraft carrier USS Coral Sea. While in the Navy, Mike became certified in Food Safety & Sanitation. Today, Mike serves Cut Fresh as our Food Safety Quality Assurance Sanitation Manager, making sure that every Cut Fresh batch is held to the highest standards.

In his off hours, Mike officiates high school baseball and basketball. He also likes to fish, and he is active in his church with his wife, Mary Beth.
